Iran's longest kernel — 18/20 & 20/22 jumbo

Akbari is the longest and priciest of the Iranian pistachio varieties, and its whole proposition is kernel dimension. Counts run 18/20 and 20/22 per ounce — meaning fewer, larger nuts — with an elongated almond-like shape that is visually distinct from the round Fandoghi types in the same bowl. Grown principally around Kerman and Rafsanjan, it is contracted at moisture ≤ 6%, closed shells kept low because a closed shell is a nut the customer cannot open, and aflatoxin controlled tightly to destination limits. That last point deserves emphasis on pistachios specifically: they are among the highest aflatoxin-risk products in the food trade, EU limits are strict, and Iranian consignments have historically drawn concentrated regulatory attention. Testing regime and lot traceability matter more here than on almost anything else in the nut book.

Akbari Pistachios — buyer questions

What makes Akbari worth more than Fandoghi?

Length and count. Akbari runs 18/20 to 20/22 per ounce with an elongated kernel; Fandoghi is round and runs 28/30 to 30/32, so you get far more, smaller nuts per kilo. In a clear gifting pack the difference is immediate. In a bowl of roasted salted pistachios being eaten rather than examined, it is largely invisible and Fandoghi is the better value.

How serious is the aflatoxin risk on pistachios?

It is the highest-risk category in the nut trade and the most common cause of consignment rejection, with EU limits particularly strict and Iranian origin historically under close scrutiny. It builds in the orchard and in drying and storage, so it is a sourcing and handling issue rather than something a certificate fixes afterwards. We test at load and work lots with real traceability.

Why do closed shells matter?

A closed shell is a nut your customer cannot open, so in a retail pack it is effectively a defect they will notice and resent. Natural splitting happens as the kernel matures and pushes the shell apart, so a high closed-shell percentage often signals immature or poorly handled crop. Contract it at ≤ 5% and have it verified.

Are there payment or logistics complications on Iranian origin?

There can be, and it is better addressed at enquiry than mid-transaction. Sanctions regimes and banking restrictions affect how Iranian-origin goods can be paid for and routed, and they vary by your jurisdiction.
