Kerman is the cultivar that built the Californian pistachio industry and still accounts for the large majority of US acreage, despite sharing its name with the Iranian growing region it was originally selected from. Counts run 21/25 and 24/28 per ounce, sitting between the long Iranian varieties and Fandoghi in size, with a rounded-oval kernel. Specification follows US practice: moisture ≤ 6%, closed shells low, foreign matter ≤ 0.5%, and aflatoxin controlled to destination limits under a well-developed testing and traceability regime. Harvest falls in the northern autumn, counter-seasonal to nothing in particular but complementary in supply terms to a book otherwise dependent on a single origin.

The reason a buyer chooses Kerman over Iranian origin is frequently commercial rather than culinary. Documentation, payment and shipping are straightforward in a way Iranian-origin goods sometimes are not, depending on the buyer's jurisdiction and banking arrangements — sanctions regimes and correspondent-banking caution complicate Iranian transactions for many importers. Add a large, well-organised supply base and consistent grading, and Kerman becomes the practical default for buyers who need reliability and clean paperwork above all. Where Iranian origin still wins is on the extremes: Akbari's kernel length has no Californian equivalent, and Fandoghi generally prices below Kerman for volume snacking. Buy Kerman for mainstream retail, roasting and food manufacture where consistency and transactability matter more than either extreme. Kerman Pistachios (California) — buyer questions

Is Kerman Iranian or Californian?

The cultivar was selected from material originating in the Kerman region of Iran, but the pistachios traded under this name are grown in California and account for most US acreage. If your specification means Iranian-origin nuts, say Akbari or Fandoghi and name the origin — "Kerman" alone will get you Californian product.

Why would I pay more than Fandoghi for it?

Usually for transactability rather than the nut. Californian origin means straightforward documentation, banking and shipping, which for many importers is materially simpler than Iranian-origin goods under current sanctions and correspondent-banking practice. Add consistent grading and a deep supply base and the premium buys reliability.

How does the size compare with Iranian grades?

It sits in the middle. At 21/25 and 24/28 per ounce, Kerman is larger than Fandoghi's 28/30–30/32 and smaller than Akbari's 18/20–20/22. That makes it a reasonable single-grade choice for a range that does not want to run both a volume and a premium line.

Does Californian origin remove the aflatoxin concern?

It reduces it but does not remove it — aflatoxin is a risk on all pistachios regardless of origin, and Californian lots are tested for exactly that reason. The Californian industry has a well-developed testing and traceability regime, which is part of what you are paying for. We still contract to the destination's limit and verify before shipment.
