Table eggs are fresh hen eggs in shell sold for eating, HS 0407.21; fertilised eggs for hatching are HS 0407.11 and a separate trade. The EU grades Class A eggs by weight - XL at 73 g or more, L from 63 g to under 73 g, M from 53 g to under 63 g and S under 53 g - classes set in Regulation (EC) No 589/2008 and carried into Delegated Regulation (EU) 2023/2465, which replaced it from 28 November 2023; a Class A egg has an air cell no deeper than 6 mm, is not washed and is not chilled below 5 °C, apart from up to 24 hours in transport. US weight classes are minimum weights per dozen, from Jumbo at 30 oz through Extra Large 27 oz, Large 24 oz, Medium 21 oz and Small 18 oz to Peewee at 15 oz. Shell colour follows the breed and does not change quality or taste, but markets have preferences: white eggs dominate in the USA, and brown eggs are preferred in the UK, France and China. UN Comtrade 2024 export declarations under HS 0407.21 total USD 2.96 billion across 86 reporters: the Netherlands USD 567 million, Poland USD 454 million and 233,400 MT, China USD 207 million, Türkiye USD 184 million and 150,800 MT, the USA USD 181 million and 94,800 MT, Germany USD 172 million, Belgium USD 141 million, Spain USD 121 million, Malaysia USD 116 million and 59,900 MT, India USD 76 million and 59,000 MT and Ukraine USD 74 million and 77,700 MT. Dutch and Polish eggs go mainly to Germany and other European markets; the long-haul lanes are Türkiye to the UAE (USD 108 million), India to Oman, the Maldives, the UAE and Sri Lanka, and Malaysia to Singapore (USD 110 million). Those are declared export values, not offers.

The buyer is an importer-distributor, a wholesaler, a supermarket chain or a hotel, catering and bakery supplier in the Gulf, South and Southeast Asia, Africa or Europe, and the offer is a price per 360-egg carton for a stated weight grade, colour and loading date. CBIL is a commodity brokerage company and brokers table eggs from packing stations in Türkiye, India (the Namakkal cluster in Tamil Nadu, loading at Chennai and Tuticorin), Ukraine (government-controlled territory), Poland, the Netherlands, the USA and Malaysia, against the origin veterinary authority's health certificate, a certificate of origin, the packer's grading and packing details and a halal certificate where the destination asks for one. US producers work under the Salmonella rules of 21 CFR 118: pullets from monitored breeder flocks, biosecurity, rodent and fly control, and eggs held at 45 °F (7.2 °C) or colder from 36 hours after lay. Avian influenza is the destination check. WOAH Terrestrial Code Article 10.4.15 lets an importing country require eggs from a zone free from high pathogenicity avian influenza, and in February 2026 the Saudi Food and Drug Authority suspended table eggs from 40 countries, India among them, and from named regions of 16 others including the USA, Poland, France and Malaysia, with the list under regular review, so the importer confirms the origin region is open before the contract. Cartons of 12 trays ship palletised in reefer containers at the set point in the booking - cargo-care guidance gives 0-5 °C for chilled eggs - and are tempered before they leave chill so the shells do not sweat, on FOB, CFR and CIF terms; minimum lots are confirmed per product and pack. Send the weight grade, colour, carton count, label and discharge port and the enquiry is screened and worked against it.

Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

At what temperature are table eggs shipped?

US rules require eggs to be held and transported at 45 °F (7.2 °C) or colder from 36 hours after lay, while EU Class A eggs are not chilled below 5 °C except for up to 24 hours in transport.

How does bird flu affect a table egg contract?

Importing authorities can require eggs from a country, zone or compartment free from high pathogenicity avian influenza, as WOAH Terrestrial Code Article 10.4.15 provides, and they suspend origins or regions when outbreaks are reported; under the Code a zone can regain free status no sooner than 28 days after stamping out is complete. In February 2026 the Saudi Food and Drug Authority suspended table eggs from 40 countries and from named regions of 16 more, with the list under regular review. The importer confirms that the origin region is open for the destination before the contract and again before loading.

Which documents and labels do Gulf and EU buyers ask for?

The origin veterinary authority's health certificate, a certificate of origin, packing list and invoice, and a halal certificate where the destination asks for one. Saudi Arabia takes eggs only from SFDA-approved establishments, with an SFDA import permit per shipment and GSO 9 labels in Arabic with production and expiry dates printed, not stickered. Eggs imported into the EU are marked with the ISO country code; countries whose marketing standards the EU recognises as equivalent - Albania, Bosnia and Herzegovina, North Macedonia, Türkiye and Ukraine in 2021 - use a producer code, and eggs from other countries are marked "non-EU standard".
