Eggs & Egg Powder: Table Eggs, Egg Powder and Liquid & Frozen Egg Products

Eggs trade in three forms, each with its own buyer. Table eggs in shell (HS 0407.21) go to importers, retailers and caterers by the reefer container, graded by weight - in the EU XL at 73 g or more, L from 63 g, M from 53 g and S under 53 g, in the USA by minimum ounces per dozen - and packed 30 to a tray and 12 trays to a 360-egg carton. Egg powder - spray-dried whole egg (HS 0408.91), yolk (0408.11) and albumen (3502.11) - goes to bakery, pasta, confectionery and sauce plants by the MT. Liquid and frozen egg - pasteurised whole egg (0408.99), yolk (0408.19) and egg white (3502.19) - goes to industrial bakeries and food plants in bag-in-box, pails, totes and tankers. UN Comtrade 2024 export declarations put table eggs at USD 2.96 billion (the Netherlands USD 567 million, Poland USD 454 million, China USD 207 million, Türkiye USD 184 million and the USA USD 181 million); dried whole egg at USD 324 million, dried yolk at USD 199 million and dried albumen at USD 253 million; and liquid and frozen whole egg at USD 799 million, yolk at USD 485 million and egg white at USD 108 million, with the Netherlands the largest exporter in every egg-product line. The EU alone keeps more than 350 million laying hens, producing close to 6.7 million MT of eggs a year.

The buyers are importer-distributors, supermarket chains, hotel and catering suppliers, and bakery, biscuit, pasta, confectionery, mayonnaise and ready-meal manufacturers in the Gulf, South and Southeast Asia, Africa and Europe. Avian influenza is the first destination check: WOAH Terrestrial Code Article 10.4.15 lets an importing country require table eggs from a zone free of high pathogenicity avian influenza, while Article 10.4.16 accepts egg products heat-treated to the Code's time-temperature table, and in February 2026 the Saudi Food and Drug Authority suspended table eggs from 40 countries and from regions of 16 more, exempting certified heat-treated products. Saudi Arabia takes eggs and egg products only from SFDA-approved establishments, and egg products enter the USA only from Canada, Lithuania and the Netherlands. Table eggs ship in reefer containers, chilled liquid egg at 0-4 °C, frozen egg at -18 °C or colder and powder in dry containers, on FOB, CFR and CIF terms, and minimum lots are confirmed per product and pack.
