High-Fat Fine Desiccated Coconut (Fat ≥ 65%)
Fine macaron cut | High oil content ≥ 65% for biscuits, confectionery & fillings
High-fat fine desiccated coconut (HS 0801.11) is the core technical ingredient for industrial biscuit manufacture, chocolate bar fillings, macaroon production, and premium confectionery variegates. Manufactured from the pure white endosperm of de-husked, mature coconuts, the meat is thoroughly washed, steam-blanched to eliminate enzymatic and microbial activity, shredded through specialized precision disintegrators into fine particle envelopes (typically 80% to 90% passing through a 1.4 mm / 14-mesh sieve), and dried in continuous fluidized bed dryers. The resulting product retains its natural sweet aroma, crisp mouthfeel, and snow-white appearance without artificial bleaching.
A critical buying criterion for commercial bakeries and confectionery compounders is the fat content and fatty acid composition. Our high-fat fine grade guarantees a minimum of 65.0% natural coconut oil (dominated by medium-chain triglycerides, primarily lauric acid C12:0 at 45–53%), delivering essential moisture retention, crumb structure, and rich creamy sensory notes to baked goods. Moisture is maintained strictly below 3.0% (and Free Fatty Acids below 0.15% as lauric acid) to prevent hydrolytic rancidity during transoceanic container shipping. CBIL sources from BRCGS, FSSC 22000, and ISO 22000 certified processing facilities across Sri Lanka, Indonesia, the Philippines, and the Pollachi-Kangayam belt in Tamil Nadu, India. Consignments are available in both natural unsulphured (SO₂ < 10 ppm) and sulphured export grades, packaged in 25 kg 4-ply multi-wall kraft paper bags with food-grade polyethylene heat-sealed liners (FCL 20ft: 12.5–13.5 MT / 40ft HC: 25–26 MT) on FOB, CFR, and CIF terms.
Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

High-Fat Fine Desiccated Coconut (Fat ≥ 65%) — buyer questions
What is the difference between sulfured and unsulfured desiccated coconut?
Unsulfured desiccated coconut is 100% natural, containing zero added preservatives (residual sulfur dioxide SO₂ naturally under 10 ppm). It is the standard mandated by European Union clean-label regulations and health-food brands. Sulfured desiccated coconut is treated with food-grade sodium metabisulfite (typically 50 to 100 ppm SO₂) during processing to prevent natural enzymatic browning and maintain a brilliant snow-white color over extended shelf life in hot or humid destination markets.
How are microbiological hazards like Salmonella controlled during production?
Salmonella contamination is the critical hazard in coconut processing. Audited partner mills utilize automated continuous steam-blanching systems where freshly grated coconut kernel is exposed to saturated steam at 88°C to 100°C for a validated residence time (typically 3 to 8 minutes), followed by positive-pressure closed-loop drying and magnetic separation. Every export lot undergoes composite laboratory microbiological testing under ISO 17025 methods, certifying zero Salmonella detection prior to bill of lading issuance.
