High-Fat Medium Desiccated Coconut (Flake & Shred Cut)

Granular medium shred | Rich coconut texture for bakeries, granolas & toppings

High-fat medium desiccated coconut (HS 0801.11) represents the premier textural grade of dried coconut endosperm, featuring larger granular shreds where 70% to 85% of particles are retained on a 1.4 mm to 2.0 mm mesh screen. This larger cut profile preserves the crisp cellular matrix of fresh coconut kernel, providing an unmistakable chewy mouthfeel, excellent toasted surface browning, and superior oil retention when baked into pastries, cakes, and breakfast cereals.

Like our fine grade, CBIL's medium desiccated coconut is processed exclusively from prime mature coconuts, delivering full natural oil richness (≥ 65.0% fat content) with moisture strictly maintained below 3.0% and free fatty acids under 0.15%. Because larger particles expose less surface area per unit weight to air, medium-grade coconut exhibits outstanding oxidative stability, making it the preferred choice for ready-to-eat muesli, breakfast granolas, toasted coconut chips, and surface decoration on donuts, lamingtons, and chocolate treats.

CBIL arranges direct mill container shipments from leading coconut exporters in the Philippines, Indonesia, Sri Lanka, and India. Every production run is processed under strict HACCP and GFSI-benchmarked quality controls, with metal detectors (ferrous, non-ferrous, and stainless steel) verifying product purity prior to packing. Shipments are packed in robust 25 kg multi-wall paper bags with inner polyethylene food-grade barrier liners, loaded 12.5 to 13.0 MT per 20ft container or 25.0 to 26.0 MT per 40ft High Cube container, on FOB, CFR, and CIF terms.

Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

High-Fat Medium Desiccated Coconut (Flake & Shred Cut) — buyer questions

What makes medium cut better than fine cut for bakery toppings and granolas?

Fine-cut desiccated coconut incorporates smoothly into wet batters and doughs without affecting baking moisture. However, when used as an exposed topping or in crunchy granolas, fine particles burn easily and lose their visual identity. Medium cut provides discrete, visible coconut shreds with substantial surface area that brown evenly into a golden, aromatic crust without charring.

What is the recommended storage condition to prevent rancidity?

Due to its high fat content (≥ 65%), desiccated coconut should be stored in a cool, dry, and clean warehouse at temperatures between 15°C and 20°C with relative humidity below 60%. Bags must be stored off the floor on clean wooden or plastic pallets away from direct sunlight, strong odours (such as spices or chemicals), and heat sources to maintain a 12 to 24-month shelf life.
