Mayonnaise and dressings are mixed condiments under HS 2103.90, a heading led in 2024 UN Comtrade export declarations by the USA (USD 1.74 billion), Italy (USD 1.71 billion), China (USD 1.21 billion), Germany (USD 1.03 billion), Thailand (USD 978 million), the Netherlands (USD 953 million), Mexico, Belgium, Canada, the UK, Poland and Spain. The heading holds every other sauce too, so the figures size the trade rather than mayonnaise alone.

What makes a mayonnaise is set by the market's standard. In the US, 21 CFR 169.140 defines mayonnaise as an emulsified semisolid food of vegetable oil, an acidifying ingredient and an egg yolk-containing ingredient, with not less than 65% vegetable oil by weight. In Europe the industry code of practice sets mayonnaise at a minimum 70% fat and a minimum 5% egg yolk. Below those levels the product is sold as a light mayonnaise or a dressing. Emulsion stability is the quality question: an oil-in-water emulsion that separates in heat or after freezing is a claim, so the specification states viscosity, pH and the stability test the factory runs. Shelf-stable mayonnaise ships unrefrigerated before opening, so cold chain is not required; chilled fresh lines are quoted separately. Egg and mustard are the allergens to emphasise under Regulation (EU) No 1169/2011, US labels declare egg among the nine major allergens, and Gulf labels follow GSO 9 in Arabic. Minimum orders are confirmed per product and pack. Cartons ship in 20-ft or 40-ft dry containers on FOB, CFR and CIF terms. Send the product, oil and egg spec, pack, label market and discharge port, and the enquiry is screened and worked against it.

Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.
