Soy sauce is HS 2103.10, and teriyaki, hoisin and other Asian cooking sauces are HS 2103.90. UN Comtrade 2024 export declarations under HS 2103.10 total USD 970 million and about 634,000 MT across 102 reporters: China USD 222 million and 232,600 MT, the Netherlands USD 204 million and 81,400 MT, Japan USD 81 million, the USA USD 74 million, Singapore USD 60 million, Thailand USD 57 million, Indonesia USD 28 million and Malaysia USD 27 million. The Netherlands figure reflects brewing and bottling for the European market.

The first line of any soy sauce spec is how it was made. Naturally brewed soy sauce ferments soybeans and roasted wheat with koji mould in brine for months; hydrolysed soy sauce is made fast with acid-hydrolysed vegetable protein, and acid hydrolysis is where 3-MCPD forms. Regulation (EU) 2023/915 sets a maximum of 50 µg/kg of 3-MCPD in dry matter for hydrolysed vegetable protein and soy sauce, equal to 20 µg/kg in a liquid of 40% dry matter. Halal is the second line. Naturally brewed soy sauce contains alcohol produced by fermentation, and certifiers differ in how they treat it, so halal-certified lines are supplied as certified by the destination's accepted certifier, with no mirin or added alcohol in the recipe. Oyster sauce and other shellfish-based sauces are not brokered. Soy and wheat gluten are emphasised under Regulation (EU) No 1169/2011, US labels declare soy and wheat among the nine major allergens, and Gulf labels follow GSO 9 in Arabic. Minimum orders are confirmed per product and pack. Cartons, drums and bag-in-box ship in 20-ft or 40-ft dry containers on FOB, CFR and CIF terms. Send the sauce, brewing method, pack, halal requirement, label market and discharge port, and the enquiry is screened and worked against it.

Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

What is the difference between naturally brewed and hydrolysed soy sauce?
