Buyers come to this page rather than the onion or garlic pages for one of two reasons — they are building a soup, noodle or ready-meal vegetable mix and need several lines matched to one rehydration profile and dice size, or they need a colour rather than a flavour. Beetroot and tomato are bought largely for colour load and both are unforgiving: tomato is hygroscopic and cakes if the moisture or the packing barrier slips, and beetroot pigment fades with heat, so both are hot-air dried on a controlled profile and belong in lined, sealed cartons rather than open bags.

The leaf lines behave differently again. Mint and curry leaf are air-dried rather than hot-air dried, because heat strips the volatile aroma that is the entire purpose of buying them, and leaf carries a higher microbiological load than diced root vegetables — so steam-sterilised or ETO-free formats matter more here than anywhere else in the family. Matching dice size across a mix is the practical detail buyers most often miss: a 6 mm carrot dice and a 10 mm cabbage flake will not rehydrate together in a 5-minute noodle cup, and the result is a hard carrot in a finished bowl. Product is metal-detected and sieve-graded, arranged against SGS certification of moisture, SO₂ (≤ 15 ppm or SO₂-free), ash, colour, and micro including Salmonella absent in 25 g. Supply is structured in 10kg and 20kg lined cartons and fibre drums, container-load, on FOB, CFR and CIF terms — these are light, bulky lines that cube out well before they weigh out.

Can you supply a matched vegetable mix for instant noodles?

Yes, and the detail that decides whether it works is dice size, not the vegetables themselves. A 6 mm carrot dice and a 10 mm cabbage flake will not rehydrate together in a 5-minute cup — you get a hard carrot in a finished bowl. Give us the rehydration window and we will size each line to it rather than shipping standard cuts and hoping.

Why does dehydrated tomato cake in storage?

Tomato is hygroscopic — it pulls moisture out of the air, and once it does it clumps and will not free-flow. It needs a tighter moisture spec than the other lines (≤ 5%) and a proper sealed, lined carton rather than an open bag. If a lot caked in your warehouse, the packing barrier or the ambient humidity is usually the cause, not the drying.

Why are mint and curry leaf air-dried instead of hot-air dried?

Heat strips the volatile aroma, which is the only reason you are buying them. Air-drying preserves it at the cost of a longer cycle and a higher price. Leaf also carries a higher microbiological load than diced root vegetables, so specify steam-sterilised or ETO-free for EU and US entry — it matters more on these lines than on carrot or beetroot.
