Dehydrated potato flakes and granules for food service, snack and bakery lines

Potato flakes are made by cooking and mashing peeled potatoes, drying the mash on a heated drum and breaking the sheet into flakes; granules are dried in an add-back process to a free-flowing powder. Both reconstitute with hot water or milk and are bought by food-service kitchens, ready-meal and snack manufacturers, bakeries and coatings makers. A commercial flake specification reads moisture 10% maximum (many producers run 6-8% for shelf life), bulk density about 210-330 g/l, water absorption of at least 6 cm³/g, sinters and burnt particles at 0.2% maximum, and additives declared: an emulsifier (mono- and diglycerides, E471) for texture, an antioxidant (E304 or E320) and, where used, sulphite as a preservative, which some producers cap at 10 mg/kg and which must be labelled above the importing market's threshold. Granules are specified by particle size and bulk density and are the base for potato-starch-free snack dough and fabricated chips. The heading is HS 1105.20, flakes, granules and pellets of potato. The buyer is a food-service distributor, a snack or ready-meal plant or a bakery ingredients house in the Middle East, Africa, South and Southeast Asia or Latin America, and the offer is a price per MT for a stated grade, additive profile and pack. CBIL is a commodity brokerage company and brokers potato flakes and granules from processors in Germany, Belgium, the Netherlands, the USA, India, Denmark, Poland and Egypt against the producer's specification and certificate of analysis per lot (moisture, bulk density, sulphite, microbiology), a food-safety certificate such as BRCGS or FSSC 22000 where the producer holds one, a health certificate and certificate of origin, and a halal certificate where the buyer needs it; emulsifiers are specified from vegetable or halal-certified sources. Lots move in 25 kg multi-wall paper bags with a PE liner on pallets, or in big bags, in 20-ft and 40-ft dry containers, on FOB, CFR and CIF terms; minimum orders are confirmed per product and pack. Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.
