Dried mushrooms fall under HS 0712.3: 0712.31 for Agaricus (button) mushrooms, 0712.32 wood ears, 0712.33 jelly fungi, 0712.34 shiitake and 0712.39 the others, which include oyster, porcini and functional mushrooms such as reishi, lion's mane and cordyceps when traded dried and unprocessed. They are sold whole, sliced, diced or as powder, to soup, sauce and ready-meal makers, seasoning blenders, retail packers and supplement manufacturers.

China dominates the trade. In 2024 (UN Comtrade, partner World) China exported 29,500 MT of dried shiitake under HS 0712.34, worth USD 420 million. Under HS 0712.39 China exported USD 87 million, followed by Italy (USD 21 million), France (USD 20 million) and Germany (USD 14 million).

Buyers set their own limits, and the specification usually covers moisture, foreign matter, sand, insect damage, microbiology (total plate count, yeast and mould, E. coli, Salmonella absent), pesticide residues within the importing market's maximum residue limits, and heavy metals. EU imports of dried mushrooms must meet EU MRLs and contaminant limits. Organic lots need certification recognised by the importing market, such as EU organic with a certificate of inspection or USDA NOP. Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.
