Long-life cakes and croissants are baked to sit on an ambient shelf for weeks or months, not days, and that is done by the recipe and the pack together. Fat, sugar, egg and glucose syrup bind the free water, lowering the water activity so mould and bacteria have less to grow on and staling slows; shelf-stable fillings with low water activity, such as high-sugar pectin fruit fillings, keep a swiss roll or a filled croissant stable; and flow-wrapping in modified atmosphere slows oxidation and microbial growth. Bakery equipment makers describe shelf lives from two weeks to six months achieved this way, and long-life croissants use long fermentation, very little free water and high fat and sugar in the dough. The buyer is an importer-distributor, a wholesaler, a convenience or cash-and-carry chain or a private-label desk buying a stated product, filling, piece weight, shelf life and label. CBIL is a commodity brokerage company and brokers generic long-life cakes and croissants from factories in Türkiye, Poland, Italy, Spain, Germany, Belgium, France, the Netherlands, the UK, Canada, Mexico, Malaysia, Indonesia, Egypt, Pakistan and India and from UAE re-exporters, against the competent-authority health certificate, the factory's certificate of analysis including the microbiology and shelf-life basis, a certificate of origin, a halal certificate where the market requires it, and label artwork checked before printing. Cake emulsifiers and shortening decide halal: E471 can be made from vegetable oils or animal fats, so halal lines declare plant-based fat and the E471 source, and in Saudi Arabia food containing animal fats in any proportion needs a certificate from a body designated by the SFDA Halal Center. Egg, milk, wheat, soy and nut fillings are allergens: EU labels emphasise the 14 Annex II allergens under Regulation (EU) No 1169/2011, US labels declare the nine major allergens with sesame included since 1 January 2023, and Gulf labels follow GSO 9 in Arabic with production and expiry dates printed on the original label, never on a sticker. The remaining shelf life on arrival is agreed in the contract, because a product with months of life at the factory can reach a distant port with little left. Cartons are light and crushable, so stacking and palletisation are agreed before loading into 20-ft or 40-ft dry containers, with reefers quoted for chocolate-coated lines on hot-season routes, on FOB, CFR and CIF terms. Send the product, filling, piece weight, pack, label market, carton count and discharge port, and the enquiry is screened and worked against it.
Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

How much shelf life should be left on arrival?
It is agreed in the contract per product and route. The factory states the total shelf life, and the transit time, customs clearance and distribution time are deducted to set the minimum remaining life the buyer will accept at discharge.
Are the cakes halal?
Halal lines use plant-based shortening and a declared vegetable source for emulsifiers such as E471. The certificate comes from a body the destination accepts; in Saudi Arabia, food containing animal fats in any proportion needs a certificate from a body designated by the SFDA Halal Center.
What is the HS code for packaged swiss rolls and croissants?
HS 1905.90, other bakers' wares, the same subheading as bread, pastries and crackers. Sweet biscuits are 1905.31 and wafers 1905.32.
