Guar gum is the ground endosperm of the seed of the guar plant, Cyamopsis tetragonoloba, a galactomannan with a mannose to galactose ratio of about 2:1 that thickens cold and hot water. Food grade powder is sold on viscosity of a 1% solution in centipoise, mesh and moisture: Jodhpur mills publish 200 to 300 mesh grades from 3,500 to 8,000 cps, moisture typically below 12% and pH 5.5-7.5, and an EU buyer guide names 3,500 cps as the standard European grade. The contract states the viscometer, spindle, speed and hydration time behind the figure, because two cps numbers measured differently are not the same offer. In the EU the additive is E412 and must meet Regulation (EU) No 231/2012: galactomannan not less than 75%, protein not more than 10%, loss on drying not more than 15%, total ash not more than 5.5%, acid-insoluble matter not more than 7%, arsenic 3 mg/kg, lead 2 mg/kg, mercury 1 mg/kg and cadmium 1 mg/kg, and EFSA's 2024 opinion recommended lower toxic element limits based on actual levels. In the USA guar gum is affirmed GRAS under 21 CFR 184.1339 to Food Chemicals Codex specifications, with use levels by food category. APEDA puts India at 80% of world guar output, 72% of it from Rajasthan, and Pakistan grows guar in Tharparkar and Umerkot in Sindh and Layyah and Bhakkar in Punjab.
UN Comtrade 2024 export declarations under HS 1302.32, which holds guar and locust bean gum together, total USD 946 million across 78 reporters, led by India at USD 417 million and 239,900 MT and Pakistan at USD 40 million and 23,900 MT among the guar origins. The buyer is a dairy, ice cream, bakery, sauce or beverage manufacturer, a blender or an ingredient distributor. CBIL is a commodity brokerage company and brokers food grade guar gum from mills in India and Pakistan against the mill's certificate of analysis for viscosity, mesh, moisture, protein, acid-insoluble matter, microbiology and heavy metals, a certificate of origin, and FSSC 22000, BRCGS or ISO 22000 certification where the buyer's audit asks for it. Microbiology is written into the specification by the buyer, because the EU monograph for E412 carries none. Indian guar gum for the EU has been subject to pentachlorophenol analysis, at 0.01 mg/kg, and the entry conditions under Regulation (EU) 2019/1793 are checked for each shipment. Halal and kosher certificates come from bodies the buyer accepts. Bags move palletised in 20-ft dry containers on FOB, CFR and CIF terms, priced per MT, with NCDEX guar gum futures read as a market reference only. Send the viscosity, mesh, method, certification, volume and discharge port, and the enquiry is screened and worked against it.
Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.

What viscosity and mesh should food grade guar gum be bought on?
Mills publish food grades from 3,500 to 8,000 cps at 1% solution, in 200 to 300 mesh, with 3,500 cps a common European standard. The offer states the viscometer, spindle, speed and hydration time, because viscosity figures from different methods cannot be compared.
What does EU Regulation 231/2012 require of E412?
Galactomannan not less than 75%, protein not more than 10%, loss on drying not more than 15%, total ash not more than 5.5%, acid-insoluble matter not more than 7%, and arsenic 3, lead 2, mercury 1 and cadmium 1 mg/kg. The monograph sets no microbiological criteria, so the buyer adds them to the contract specification.
Are there extra EU checks on Indian guar gum?
Since 2008 the EU has applied special conditions to guar gum from India over pentachlorophenol and dioxin contamination, with a pentachlorophenol limit of 0.01 mg/kg, most recently under Regulation (EU) 2019/1793. The current listing and certificate requirement are checked for each EU-bound shipment.
How is guar gum priced and packed?
Per MT on FOB, CFR or CIF terms for a stated viscosity and mesh, in 25 kg multiwall paper bags with PE liners or 900 kg bulk bags in 20-ft containers. NCDEX guar gum futures in India show the direction of the market but are not an export price.
