Whey Powder, WPC 34 / WPC 80, Lactose & Whey Permeate

Sweet whey powder, whey protein concentrates, edible lactose and permeate from US, EU and New Zealand cheese plants, with the rennet source stated on the halal certificate

Whey is the liquid left when milk is coagulated for cheese, and the powders made from it are bought on composition. Codex CXS 289-1995 requires whey powder to carry at least 10% milk protein and no more than 5% water, and acid whey powder at least 7% protein and 4.5% water; the ADPI standard for sweet whey powder runs protein 11.0-14.5% and lactose 69.0-75.0%. Ultrafiltration concentrates the protein: WPC 34 typically runs protein 34.0-36.0%, lactose 48.0-52.0%, fat 3.0-4.5%, ash 6.5-8.0% and moisture 3.0-4.5%, and is bought as an economical dairy solid and a partial replacement for skimmed milk powder in bakery, confectionery and dairy mixes; WPC 80 runs protein 80.0-82.0%, lactose 4.0-8.0%, fat 4.0-8.0%, ash 3.0-4.0% and moisture 3.5-4.5% and goes into sports nutrition, infant formula and high-protein foods. The permeate that passes the membrane is dried too: Codex CXS 331-2017 sets whey permeate powder at 76% lactose minimum with fat 1.5% and ash 12% maximum, a low-cost solid and salt-replacer for bakery, soups and feed. Crystallised lactose is graded by purity, 98.0% minimum for edible, 99.0% and 99.5% for higher grades, with pharmaceutical lactose monohydrate meeting the USP, EP or BP monograph and sold by mesh size for tabletting. The halal point is stated plainly: whey carries the coagulant of the cheese it came from, so the halal certificate names the rennet as microbial or from animals slaughtered to halal rules, and the plant's certifier is one the destination accepts.

UN Comtrade 2024 export declarations put whey and modified whey (HS 0404.10) at 3.28 million MT worth USD 3.47 billion: the USA 512,000 MT, Germany 438,000 MT, the Netherlands 317,000 MT, France 245,000 MT, Italy 206,000 MT, Poland 191,000 MT, Ireland 141,000 MT, Austria 119,000 MT, Czechia 100,000 MT, Turkiye 88,000 MT, Spain 68,000 MT, Denmark 64,000 MT, the UK 61,000 MT and Argentina 44,000 MT; the unit values separate the products, from about USD 0.53 per kg for permeate-heavy Czech declarations to USD 1.78-2.15 per kg for the protein-rich Irish and British lines. Lactose (HS 1702.11) added 1.01 million MT worth USD 1.27 billion, led by the USA at 409,000 MT, Germany 270,000 MT, the Netherlands 133,000 MT, France 30,000 MT, Italy 26,000 MT, New Zealand 25,000 MT and Poland 25,000 MT. Powders ship in 25 kg multi-wall paper bags with polyethylene liners or in big bags, palletised in dry containers, with a shelf life stated by the maker on the specification and storage below 25 °C recommended. Excluded origins are not offered, including product re-exported, blended or re-processed through a third country. Every lot moves with a certificate of origin naming the producing plant, mine or grower country, and nothing is quoted before the seller and loading point are known.
