Edible Himalayan Pink Salt

Food grade 97–98.5% NaCl, fine to coarse mesh

Edible pink salt is contracted on four numbers and one judgement. The numbers are sodium chloride content (97–98.5% for food grade, with the balance being the iron oxide and mineral traces that give the colour), moisture at ≤ 0.5%, water-insoluble matter at ≤ 0.5%, and particle size, which is nominated as a mesh cut rather than described: powder below 0.2 mm, fine at 0.3–0.5 mm for table and shaker packs, medium at 0.5–1 mm, coarse at 1–2 mm for grinders, and granular at 2–5 mm for grinder refills and rock presentation. The judgement is colour. Lots run from near-white through light pink to deep red, and colour is graded visually rather than analytically — it does not track NaCl content, it is not a purity indicator, and a buyer paying a premium for dark pink is buying appearance, which is a perfectly rational thing to do for a retail pack and a waste of money for a food processor dosing it into a blend.

Buy edible grade rather than the spa, décor or animal grades when the salt is going into or onto food: retail table and grinder packs, private-label seasoning lines, food processing and snack seasoning, bakery, and food-service. The specification that separates it from those other grades is not the rock — it is the same mine — but the handling, screening and certification: food-grade lots are washed and screened to a declared mesh, tested for heavy metals against the destination's food limits, and produced under food-contact conditions with the documentation to prove it. Where buyers get caught is assuming any pink salt is edible because it comes from the same seam; a lamp offcut and a food-grade cut are the same chemistry and very different products commercially.
